Thiscold soba noodle recipe is one of the most typical Japanese noodles dishes. Generally soba
is made from buckwheat flour and can be eaten
hot or cold.
The hot noodle is served in a broth while the cold
noodle is served dry with sauce for dipping.
Our version of the cold soba noodle recipe is pretty
easy and with a touch of some chopped fresh garlic
and vinegar, it becomes a good refreshing meal for a hot summer day.
Cold noodle with garlic sauce
Ingredients
300g soba noodle fresh or dried
1 cup of chicken stock or water
1 cup Japanese soy sauce
1 teaspoon of vinegar
1 tablespoon of sugar
4 cloves of finely chopped Garlic (optional)
Directions
Cook the noodle and drain. Wash in cold water and set aside.
Heat up soy sauce, stock, sugar and vinegar in the source pan.
Bring to boil. Turn off the heat and add the Garlic.
Turn the noodle onto the dishes and pour the sauce
into the small bowls.
Serve each person with a bowl of sauce so they
can dip the cold noodle into the sauce and enjoy it. Cold Soba is a great snack for a hot summer day.
